Simple Supper

:::Tonight I prepared six chicken thighs by seasoning them with garlic and ginger, soaking them in teriyaki sauce and a dash of soy, and sprinkling plain breadcrumbs on top. I lightly coated the bottom of a baking dish with olive oil, and cooked the chicken at 350° for about an hour. Afterward, I took off the foil cover and baked the chicken for an additional thirty minutes. As a side, I threw together ramen noodles (fully cooked but drained of all liquid), and tossed them with the accompanying chicken seasoning packets and a bag of frozen mixed vegetables (pre-cooked beforehand). I stirred the noodles and vegetables together, adding a pat of butter as well.

 

Surprisingly, the dinner turned out well. The chicken fell from the bone, and the side of ramen and veggies had a nice taste and texture. My husband raved and even Foofer have his seal of approval (conning us into giving him an entire thigh to himself and then some).
