Biscuit Recipe for Diabetics

::The other day I mentioned I was putting together a special diabetic recipe page, and ever since I have been looking about for dishes I know my husband will fancy. I found the following at Lifescan – my hubby is particular to bread and biscuits (along with tortillas), so this recipe will suit him fine:

 

Flaky Biscuits

2 C Cake flour

2 tsp Baking powder

¼ tsp Baking soda

¼ tsp Salt

¼ C cold margarine, diced

¾ C low-fat buttermilk

 

Preheat oven to 450°F. In a medium mixing bowl combine flour, baking powder, baking soda, and salt. Cut in margarine with a pastry blender until lumps are pea-sized or smaller. Stir in buttermilk with a fork. Press dough into a ball. On a lightly floured surface roll dough into a 6 x 10" rectangle. Fold in short ends to meet in the center. Fold dough in half so it is four layers thick. Roll dough into 6" square. With a floured knife cut into 12 squares. Place 1½" apart on an ungreased baking sheet. Bake ten to twelve minutes, until lightly browned.

Tips for tender biscuits...

Use cake flour

Use margarine instead of butter.

Fold dough to increase flakiness.

Handle the dough as little as possible.

Stir ½ cup shredded cheddar and two tablespoons chopped chives or green onions in with the buttermilk.
