Harvest Pound Cake, or Apple Cake

Greetings once again. How have you all been?

I've been quasi-busy. I have two recipes to share with you today. Recipes that turned out so good I just couldn't keep them to myself any longer. One I got from a site online and the other I made up myself. So here goes:

Actually, there is a little less than that left as Paul had another piece last night after I took this picture. The reason I'm giving you this recipe (it's not really mine to give) is that it has been pronounced 'THE BEST CAKE I'VE EVER HAD' by Paul. And he is very stingey with compliments, especially about food. I have to agree, it's just about the best cake I've ever made.

I made a few adjustments to the recipe online. I used THREE (3) granny smith apples instead of two, and I added a teaspoon each of cinnamon and nutmeg to mine. I made it in my bundt pan, as called for, but on the top of the cake (which is, in reality, the bottom once it's taken out of the pan) I sprinkled Sugar in the Raw all over it, and when it baked, the sugar crystals hardened up and they formed a really nice little layer of crusty sweetness on the bottom of the cake, once it was turned over.

Also, I left off the glaze. Paul said he didn't want that and I think he was right. It's so moist with the apples in there, in good sized chunks I might add, and it has stayed moist out on the counter for a week now and is still as good as the first day I made it.

So that's that recipe. I have three apples left over and I asked Paul if he wanted me to make another one today since I have to use up the apples, and he said 'OH YES, PLEASE!' immediately...

I think I'll save the other recipe for my next blog entry and not get them co-mingled here. I don't want to blow this entry by hitting the wrong key and my fingers are getting weary right now. So look for the Fish Chowder recipe soon.
