Food Obsession Continues

My sisters found the largest zucchinis I’ve ever seen at the Peninsula farmers market. We spent most of yesterday afternoon making zucchini and corn fritters with fresh corn from Szalay’s farm. I brought them home to Aud and made Spanish Rice with leftover white rice, tomatoes, fresh garlic, red onion, corn, veggie crumbles, and lots of chili powder and red pepper flakes. As if that wasn’t enough, I tried my hand at vegan chocolate chip cookies. They didn’t rock my world, but I’m not giving up on them yet. My plans for the other half of the largest zucchini I’ve ever seen will come to fruition on Wednesday night when I make lasagna with zucchini and veggie chorizo sausage and, if there’s any more zucc left, zucchini bread.

Aud suspects that I’m nesting. I’ve advised him to enjoy it while it lasts.

Today is my first attempt at fundraising. A restaurant in Ohio City is donating 20% of its sales to my team for the MS 150. I’m hoping lots of hungry patrons gorge on burritos and plantains today.

As for the bike riding, it is much less enjoyable than it used to be. Last summer, my 20 mile rides were exhilarating. This summer, I feel like a slacker when I stop after 20 miles. I don’t notice the wildlife on my rides, I rarely say hello to others. I clench my teeth and keep going, despite the fact that I’d much rather pull over, take off my shoes, and take a nap under a tree. I’ve got very few rides to go before the big day, and I hope I can manage it. The plan: 40 on Wednesday. 50 on Saturday or Sunday. 20 next Wednesday. 60 the following Saturday or Sunday. 30 on Wednesday. Rest until the big day(s). 75 the first day. 75 the second. Eat Mexican food until I pass out. The End.
