Betty Crocker Day Two of my daughters, Brittany and Caitlyn were on hand to make candy yesterday. Brittany made several batches of toffee, and Caitlyn made caramels, and scotcheroos. It took a collective team to make peanut butter cups, With Caitlyn making the filling, Brittany rolled it into balls, and both of them coated them in chocolate. Using the leftover chocolate coating, we dipped pretzels and Oreo’s. The brown sugar Brittany brought was dark brown, while the toffee recipe called for light brown. She just used her own, and it burned pretty quickly. We tossed that batch and used the light brown for the rest of it. It worked considerably better. Pour the hot liquid mixture over chopped pecans, and top with chocolate chips. Mmmmmmmmm It took a long, long, long time for Caitlyns caramels to reach the soft-ball stage. I think Brittany made 2 or 3 batches of the toffee in the time it took to stand there and stir the caramel pot. I have to admit though, the camarmels are my favorite, and they turned out extremely good. Cait also made a childhood comfort food of mine, Scotheroos. The easiness of todays Rice Krispy Treats are todays favorites, but my grandmas followed a recipe on the back of the Rice Kripsy box, and made the most fabulous dessert we ever tasted as kids. They are easy to prepare, and easy to eat. Scotcheroo’s 1 cup sugar 1 cup karo 1 cup peanut butter stir in pot on med/low til melted pour over a big bowl, containing 6 cups Rice Krispies. Mix well to coat. Put it all in 8x11 baking dish. Melt together 6 oz chocolate chips and 6 oz butterscotch chips. Spread over the top. Wait until it all sets up, and enjoy! We got all of our candies wrapped in wax paper or plastic wrap, and felt as if we got a good jump on the holidays. They can all sit in the freezer until time to eat! It is Christmas Season, and enjoying good company is the best part of the whole year. |
