One of the only vegetables I can reliably count on my kids to eat is green beans. They both love 'em. (even loved green bean baby food... eeeeewwww) So, in addition to attempting sunflowers, tomatoes and watermelons in pots on my patio, I also planted green beans. The first few are just getting to full size and the kids are fighting over who gets to eat the ones that are ready. And if I turn my back, they're likely to pick some that are still small.

Brilliant! Getting fresh veggies into the kids' diets without really trying. :)
