Hiking Lunch

I had gotten home late and had to figure out something to bring to eat on my hike tomorrow. We bring snacks for on the trail, eat lunch at the top (because there is always elevation), and then have a beverage at the bottom when we're done.

Shit. I hadn't gone to the store. Nothing jumped out at me as being lunch food.

Time to improvise. I'd been doing up these little quesadillas at home, so I decided to try something with the tortillas. Hmm. Salmon cream cheese. Cilantro. Turkey.

I came up with three mini-soft-taco-roll-up things. Number one was salmon cream cheese, spring lettuce mix, and a tomato. Number two was an herbed Laughing Cow cheese wedge, lettuce, tomato, basil, and pine nuts. The third was mayo, chipotle, cilantro, the last of the little roma tomato, turkey and niblet corn.

I remembered I had a grapefruit. That's part of in-the-car breakfast, along with yogurt. I've got Kashi granola bars for the trail, as well as my usual mix of almonds, raisins, and walnuts. End-of-trail beverage will be Mike's Hard Lime.

Who knew I was set? Sweeeeeet.

(And funny to note that JS doesn't know the words quesadillas, Hmm, herbed, chipotle, roma, niblet, Kashi, and sweeeeeet.)
