Last night I realized we didn't have leftovers for my lunch today, so I went out and picked up a few packages of meat, then split them into "individual" servings. I wrapped them in foil and marked than with "D's Lunch (Type of Meat)". I now have my own chicken, pork, hamburger, and some shrimp. Today we went to an Asian grocery store where I found mirin and miso for a couple of my Japanese Meals on the Go: Bento Boxes recipes. Or any other recipe that I can do a single serving of for my lunches. I'll primarily use them when there's no leftovers to use.


Lunch today:



Side Car: Ginger Pork on a bed of Steamed Rice

Top Tier: Mandarin Oranges, Babybel, Olives, and Butter Sugar Cookies (Heart & Bear in a tinfoil pouch to keep them from getting soggy)

Bottom Tier: Gingered Cucumbers over Shredded Carrots


The Ginger Pork came from Japanese Meals on the Go: Bento Boxes. I marinated the meat overnight and cooked it up this morning. It was a bit on the salty side for me, so I'll probably cut the soy sauce in the recipe in half and maybe add water to make up for the loss of liquid in the marinade. The Gingered Cucumbers came from a really old Deal-A-Meal cookbook. They were okay, but I packed a bit much. Next time I'll know to cut down the number I put in my box.


Tomorrow the last of our company goes home (in the morning, thank God), but we'll be running around to get the rent money together for the landlord. The kids don't go back till Thursday, but. I'm kinda hoping the hub can get back to work on Wednesday so I can start getting back into routine and exercising and such. I actually miss it. How's that for amazing?
