Vegging out (edited)

Ken and I have a fairly limited repertoire for vegetables, and I’d like to expand it. Give me suggestions! What are your favorite ways to prepare various vegetables?

I had a bunch of caveats in mind when I started thinking about asking this, but I’ve decided to just open it up to all responses.

Okay, one caveat: Fresh vegetables only. I think frozen vegetables are disgusting. Canned veggies are a possibility, but I’d prefer suggestions for interesting fresh vegetables and recipes for preparing fresh vegetables.

Okay, I see that some caveats are, in fact, necessary:

1. The only canned vegetables I'm familiar with using are black beans and mixed beans for chili, as well as tomato sauce (but none of those icky things with chunks of tomato, like stewed tomatoes).

2. Recipes, recipes, recipes! Remember that we hate to cook and vague suggestions will be met with uncomprehending stares.

3. I can't believe I have to say this, but no fungus! [shudders]
