Mead. The prefered beverage of the classic Norsemen.

Warm 1 gallon of spring water and 2 pounds of honey in the sun. Mix them together completely. Add champagne yeast and cover with a breathable cloth. do not mix in yeast but let it float on top. (You can add flavored teas to add flavor.Just make sure you add it before the yeast and let the mixture cool to 90 degrees before adding the yeast.) Place in a warm, dark location. I leave mine for 3 days. The longer you leave it, the "drier" it becomes. Strain and drink. I think it tastes just like Cold Duck.
